This recipe came from a combination of two recipes, that I inadvertently read at once. The result was raving reviews so I’ll share my secrets now. Here’s to delicious banana bread.

1 ¾ cups flour

2/3 cup sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1-teaspoon cinnamon

¼ teaspoon nutmeg

1/8 teaspoon cloves

1 cup mashed bananas (2-3)

1/3 cup butter, softened

2 Tablespoons milk

2 eggs

¼ cup chopped nuts

Preheat oven to 350 degrees. In large mixer bowl, combine 1 cup of the flour, the sugar, baking powder, baking soda, salt, and spices. Add mashed banana. Add butter and milk.. Beat with mixer on low until blended, then on high for 2 minutes/Add eggs and remaining flour. Beat until blended. Stir in nuts.

Pour batter into greased 8x4x2 inch loaf pan. Bake in oven for 55-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on wire rack. Remove from pan and cool thoroughly. This is more flavorful if you can wait a day before eating. My family ever has, though.
