The big Thanksgiving Day is over. While the family is still here, what do you feed them, and what do you do with yesterday’s leftovers? Recipes adorn the internet. While the formal Thanksgiving dinner is always repeated, what else can you do?
Dole has a recipe using our holiday leftovers to make a bright and vitamin-rich meal, quick to make on an evening of Black Friday shopping.
Here is a simple yet flavorful and healthy sweet potato and turkey hash recipe.
- One tablespoon of olive oil
- 1 Sweet Potato (about 12 ounces), chopped
- 1/2 cup Red Bell Pepper, chopped
- 1/4Â Red Onion, chopped
- One teaspoon Creole seasoning
- 2 cups chopped cooked skinless turkey breast
- 1/4 cup fresh parsley, chopped
- Hot sauce (optional)
Directions
- Heat the olive oil in a large nonstick skillet over medium-high heat.
- Add the sweet potato and cook for 10 minutes, stirring frequently, until it browns. Add the bell pepper, onion, and Creole seasoning. Reduce heat to low and cook for 5 minutes longer until vegetables soften. Add the turkey and cook until the turkey is warmed through.
- Sprinkle parsley on top and serve with hot sauce, if desired.
